Baby Gold peaches stay hard even when ripe and have a firmer texture than other varieties.  They have a rich golden flesh that are suitable for canning because they maintain their colour and firm texture in jars.  Also wonderful for baking.  Try cutting in half, remove the pit and grill them on the BBQ.  Serve with pork, chicken or add some ice cream for a quick dessert.
