Back by popular demand are farm fresh eggs. Many of you have commented on how great they taste compared to store bought varieties. As we designed the basket this week we kept a family favourite recipe in mind. Its called Eggs in Purgatory and you will have everything this week in your basket to make it. It’s fast and simple for brunch or a light summer supper. I can make it in less than 15 minutes so give it a try. Heat up 1/4 cup olive oil in a medium skillet, add 5 cloves of chopped garlic, salt and black pepper. Simmer for 2 minutes. Stir in 1/2 tsp red pepper flakes then add a 1/2 pint of cherry tomatoes and cook for about 2 minutes until the tomatoes split. Reduce heat and cover pan smashing the tomatoes from time to time with a wooden spoon until saucy (5 -7 minutes), Crack 6 eggs into mixture spacing them evenly and season, cover until the whites are set (4-6 minutes). Carefully spoon eggs into shallow bowls and add the tomato sauce around the eggs. Serve with a baguette and salad. Trust me you will love this!
Here is what you can expect this week:
Farm Fresh Eggs Just like last time and enough for the recipe above.
Lettuce Mix Freshly washed and ready to eat. Mix of red and green tender lettuces
Chinese Red Radish Treat it like any other radish. Add colour to your salads or stir fry, can also be roasted. Try something really different like spicy radish french fries. Cut into sticks, combine with oil, chili paste, soy sauce, ginger, sugar and salt. Spread on a sheet pan and roast until golden.
Cherry Tomatoes Use it in the recipe above or in your salad. Natures candy.
Garlic We planted the garlic last fall and harvested in July. They have been curing in our barn and now can be used right away or kept at room temperature in a dry dark place. We chop up a bunch and keep a jar full in the fridge for a fast, cooking ready supply.
Slicing Cucumbers Refreshingly cool and crisp taste that is perfect marinated in vinegar. Slice very thin and add sweet onions with a sweet and tangy vinaigrette for a classic side dish.
Jalapeno Sampler A couple of green chili peppers that you can add to your sandwich, tacos, pizzas or chop them and add to soups, stews sauces and more. If you don’t have red pepper flakes for the above recipe, use them chopped finely (add seeds for extra heat).
Garlic Chive Blossoms Edible white flowers with a garlic flavour.
