Greens, greens, greens! For those that have been in our CSA a while you know early season CSA baskets are all about the greens. You are going to be so healthy!! If you have any leftover by the end of the week, wilted or “past their prime” greens can be added to your smoothie. Our certified organic and biodynamic produce is high in vitamins and minerals that exceed what you get from a grocery store. What you receive has been sun ripened and picked at its peak just before delivery.
Here is what you can expect this week.
Green head lettuce Large leaves can be used for sandwich wraps.
Red head lettuce The colour is striking, mix it with your green lettuce for a lovely salad.
Garlic scapes A garlicky punch of flavour if used raw in salads but gets milder and sweeter when cooked. We love to coat them in olive oil and grill them on the BBQ. Once slightly charred, drizzle with lemon juice and enjoy on any protein you are grilling.
White turnips with greens The bulb you can grill, cook or eat them raw. Grate them into a salad or slice them up with dip. The greens can be used in a salad, sandwich or as a wrap. Also add them to soups or casseroles. I like to saute them and combine with black-eyed peas and brown rice for a healthy version of a southern favourite. Turnips are a rich source of minerals and vitamins.
Tat Tsoi A buttery Asian green that is super sweet and easy to love. Similar to spinach, its very versatile. You can toss the small leaves into your salad, add it to a stir fry or smoothie. It is chick-full of vitamins.
Potted Parsley plant The worlds most popular herb will be now fresh and handy in your kitchen. Always ready for a quick garnish, add to soups, stews, sauces and burgers. Keep in a sunny location and water when dry.
Tarragon Used in french cuisine, tarragon has a subtle herbal flavour well suited for fish, chicken and part of vinaigrettes and sauces.
