At Rumar Farm, summer is a season of abundance—and few crops embody this better than summer squash. Whether you’re savoring zucchini noodles, golden patty pans, or tender yellow crooknecks, this cheerful veggie is a staple on our organic farm during the warmer months.
What Is Summer Squash?
Unlike winter squash, which has hard skin and stores well, summer squash is harvested while still tender and immature. Its skin is thin, its flavor is delicate, and it’s incredibly versatile in the kitchen.
Grown the Organic Way
Our summer squash is grown from non-GMO, organic-certified seeds. We never use synthetic pesticides or fertilizers—just compost, cover crops, and lots of love. Squash plants thrive in warm weather and rich, well-drained soil. We plant ours in late spring and begin harvesting in early summer, sometimes picking multiple times a week to keep up with their rapid growth.
Pollination is key to healthy squash, so we rely on a thriving population of bees and beneficial insects, nurtured by the wildflowers and companion plants we grow nearby. Once harvested, summer squash should be stored in the refrigerator and eaten within 3–5 days for maximum freshness.
Cooking with Summer Squash

- Grilled Zucchini with Fresh Herbs
Slice zucchini lengthwise, brush with olive oil, and grill until tender. Sprinkle with chopped basil and a squeeze of lemon. - Summer Squash Fritters
