The first days of fall at Rumar Farm are a celebration of nature’s bounty and a time for reflection. With the harvest in full swing and the landscape shifting, it’s a moment to appreciate our hard work and the gifts of the earth. As we embrace the season, we are reminded of the importance of community, sustainability, and the simple joys that come with each change in season. The first days of fall also brings a noticeable shift to the farm. The air cools, and a gentle breeze stirs the leaves, signaling the end of summer’s reign. That’s what makes these early autumn days so special on our organic farm.
Here is what you can expect this week:
Gala Apples – One of the most popular apple varieties, they have a sweet, pleasant flavour. Juicy and crisp, great choice for lunches, salads, sauces, pies and baking.
Sugar Snap Peas – A great source of vitamins C and E, zinc and other antioxidants that strengthen your immune system. An easy recipe for a fresh and healthy side dish is with lemon, butter, garlic and salt & pepper to taste. You eat the whole pod, just sauté them with chopped garlic, salt and pepper until tender-crisp. Remove and toss with lemon zest.
Cherry Tomatoes – A pasta with cherry tomatoes is a quick and easy dish that comes together in 15 minutes. In a large skillet, heat olive oil and cook cherry tomatoes until softened. Add garlic, salt and pepper and mash the tomatoes to release their juices. Transfer cooked pasta on top of the tomato sauce along with basil and parmesan cheese then toss. Serve it with garlic bread and a simple salad for a complete meal. Add crushed red pepper flakes if you want a bit of heat.
Yellow Beans – Here is a clever yellow wax bean dish that’s easy and flavourful. Can serve warm or cold so perfect for fall meal side. Chop beans, smash some garlic cloves and sauté in heated oil for 2-3 minutes. Add a cup of water and cook for 20 minutes. Drain, add more chopped garlic and fresh herbs like parsley or dill, salt and pepper. Easy and so good.
Spaghetti Squash – Best way to prepare this squash is to roast it in the oven. Cut in half lengthwise, after scooping out the seeds with a spoon, rub the inside with olive oil, then season with salt and pepper. On a baking sheet place squash cut side down (sneak a few fresh herds underneath) and bake at 375 until fork tender (40 – 50 minutes). Turn up and cool for 5 minutes and run a fork through the flesh to separate the “spaghetti-like strands and serve.
Lettuce Mix – Tender lettuce mix for a healthy salad.
Basil – Use it in your cherry tomato pasta recipe. A robust, aromatic and spicy flavour that goes great with tomato-based dishes.
