Part of organic farming is sorting out a lot of produce.  Still fresh and tasty, you will need to use a knife to enjoy them.  Baby Gold peaches stay hard even when ripe.   They have a rich golden flesh that are suitable for canning because they maintain their colour and firm texture in jars.  Also wonderful for baking.
