Summer is finally here and that means BBQ season. Luckily many vegetables can be grilled to make fast and easy side dishes. Adding more plants to your diet can be easily done by slicing up whatever fresh (or past its prime) vegetables you have in the fridge and toss them on the grill. Those grilled veggies can be used so many ways, chopped up and added to a pasta salad or grain bowls. Grilling brings out the deep roasted smokey sweetness from any plain vegetable. Here is what you can expect in your basket this week:
Hearty Salad Mix A blend of baby Kale, romaine lettuce and mustard greens. Washed and ready to eat.
Spring Onions Long slender green tops and a small bulb, both edible. Good either raw in salad or sandwich. Try coating them with olive oil, salt and pepper and grill on the BBQ until slightly charred.
Green Mini Romaine Lettuce (2) If you have never tried grilled romaine lettuce on the BBQ, here is your chance! Cut lengthwise and coat with olive oil vinaigrette. Grill until lightly browned on all sides, turning every minute or two until done. Serve each half whole or slice crosswise and toss them in a bowl.
White Turnip We just love this versatile veggie. Treat it like two different vegetables, the bulb and the greens. Roasting turnips mellows their sharp flavour and makes them wonderfully tender. The greens can be chopped up and added to your salad or as a quick saute with mushrooms and garlic.
Sugar Snap Peas Eat them raw as a snack, they are incredibly sweet and delicious. Use them to make a simple side dish, saute them with lemon and butter. Store in an airtight vegetable container in your fridge crisper, but use them up quickly they don’t hold very long.
Bunch Lavender Add a pleasant scent to your home with this small fragrant bouquet. Some other interesting ways to use lavender is in desserts and drinks. Perhaps make a small batch of infused oil or lavender bath salts.
